How Can I and Why Can’t I?

How am I ever going to lose 10, 20, 30 or more pounds? Losing weight is a fairly simple mathematical equation—calories burned minus calories consumed. Calories are a measure of energy. The more energy you use the more calories you need to fuel your body and conversely, the less energy you use the less fuel your body needs to operate. So, in a sense, one could choose Bariatric surgery, wire their jaw shut, or eat only grapefruit and lose weight.

But is losing weight the real goal? Granted if we lose weight we will probably have better health numbers and being overweight or obese is a leading indicator for Prediabetes, Diabetes, Cancer, Heart Disease…. So, in real sense losing weight is important. I would contend that when we say we would like to lose weight or need to lose weight, we are really saying, we need to be healthier. And for the most part if we are skinnier, we would be healthier.

Perhaps we could amend the question by saying, “We need to lose 10lbs, so we will be healthier.” That is a good reason to lose weight. And if you read last week’s newsletter, “To Serve or Be Served” you will remember that Americans and the world are not on a healthy trendline. Which means that the healthier folks are going to have to serve a lot more folks who are unhealthy.

But why is it so hard to lose weight so we can be healthy? I have been wrestling with that question for years. I know that I “bought” into eating the organic version of the Standard American Diet AKA SAD, but it was only minorly better than the nonorganic version of the Standard American Diet. It wasn’t until last October that I finally understood the forces that were at work to prevent me from being healthier. I picked up a copy of the book Brightline Eating by Susan Pierce Thompson. She explained why so many of us struggle with weight loss and how you can win with food.

Is Brightline perfect for everyone? Mostly. I do believe that the information, tools and strategies are helpful and have helped me lose 25 pounds and keep them off through the Holiday Gauntlet of Halloween, Thanksgiving, Christmas, New Years, Valentine’s Day, Easter and numerous birthday celebrations.

Having the science behind why it can be so hard to lose weight and get healthy was invaluable and then having a strategy to eat the right amount of food and the right foods was essential. Without a food plan/strategy it is almost impossible to compete with Grocery Manufacturers of America and their advertising campaigns. The GMA is not concerned about your health, they are concerned about the health of their bottom line.

But we don’t have to play their game, we get to choose. I have a plan for my food and to be as healthy as possible as for as long as possible. My plan looks like vegetables, fruit, legumes, nuts and high-quality proteins—both plant and meat—plus drinking water and getting exercise. This is my strategy to get and remain healthy, and those extra 25lbs I lost were a nice perk!

Bald and Beautiful

The other day I was at a middle school soccer game and one of the players had obviously been through cancer treatment recently. She was thin as a rail and bald, but she was out there and she was competing–with not an ounce of backing down. She was a fighter – a cancer fighter. I could tell that our team was unsure how to play/engage that young lady on the field. I told my daughter that if she is on the field, she wants to play and, her parents, her doctors and coaches have given her the green light. Admire her for getting out on the field and show her respect by letting her compete, but now is not the time for charity or kid gloves.

Some of you might be thinking, “Hang on. She has had a huge battle with cancer and, and, and, ….” My daughter got to guard her a fair amount during that game. After a few minutes into the game, it was plain to see that this beautiful, bald cancer fighter wanted to play and didn’t want to be treated any differently than any other player.

Cancer fighters are tough people, but you know who else are tough people? The families, her friends, the care givers, the doctors and nurses. Cancer wreaks havoc on families and it takes a coordinated team effort to support the cancer fighter.

As a farmer, it brings me no greater joy than to come alongside a cancer fighter to grow and deliver to them organically grown fruits and vegetables. If you are battling Cancer, please let us know. Breast Cancer Awareness Month

The Month of October is dedicated to Breast Cancer Awareness. In doing research for this article I came across this article from Everyday Health. Cancer is complicated and if you or a someone you know is battling cancer, any type of cancer, you are in a fight. I have copied and pasted the opening paragraph from the article below.

A cancer diagnosis can often be directly linked to your family medical history, your lifestyle choices, and your environment. You can’t control your family medical history, and only some aspects of your environment are up to you. But lifestyle choices like diet, weight, activity level, and smoking are yours to manage.

“Preventive measures are so heavily underutilized by people. And yet they work. Everything in moderation really works”, says Richard R. Barakat, MD, chief of the gynecology service at Memorial Sloan-Kettering Cancer Center in New York City. (Emphasis mine)

Diseases like Cancer are heart-wrenching and emotionally, physically and financially devastating. I hate what it does to individuals and families. I know that hate is a strong word, but what Cancer does to an individual and their family is devastating.

Thank You!

Hope

Hope is a necessary ingredient in the battle against cancer. We must believe that healing is possible and hope is an underlying cornerstone for healing to happen. Without hope, hopelessness is left and we can’t have that; we must have hope.

Since we started sharing about cancer this month, the ground swell of support and compassion has been huge.

Last week, I met Leah, a cancer survivor and single mom of two at the Snohomish County Healthy Aging Conference. Whenever I attend a conference or event, I always bring a box of good food to use as a raffle item. And you know what? Leah’s name was drawn.

At the same time, a young couple from our church just received the heart-breaking news that their under 1 y/o daughter Vivian has leukemia. Ugh! I can’t even imagine the thoughts, fears, and despair that is wracking that family.

As Breast Cancer Awareness Month comes to an end, I would like to continue our cancer conversation and shift it to one day next week. On Wednesday, 11/2, we want to celebrate, grieve, hope and pray with all the people that you and we know who are battling cancer, won the battle over cancer, as well as for those who lost a loved one to cancer.

To do this, we need your help. We need you to send in the names of individuals and families that are fighting cancer. You can share as much of your/their story with us as you feel comfortable. Because sometimes it is helpful to just write down how you are feeling and get your thoughts out.

We are also just as happy to have you share a first name, because on 11/2, when our Klesick Farms team gathers to pray, we know that God already knows the details and we just want to agree with you for healing from cancer and hope to be rekindled in yours and their hearts.

Each of you are also welcome to join us on 11/2 and pray for the individuals and families who are fighting cancer. Recipe: Garlic Butter Mushroom and Spinach Spaghetti

Ingredients:

Olive oil 8 oz package mushrooms, sliced 4 garlic cloves, peeled and thinly sliced 2 tablespoons butter 1 bunch spinach, washed, ends cut off Lemon juice, to taste Salt and pepper, to taste 1 package spaghetti Feta cheese, crumbled (optional)

Directions:

1. Boil a large pot of water and cook pasta until tender. Reserve 1 cup of cooking water.

2. While pasta is cooking, heat a large frying pan over medium-high heat then add the oil. Fry the mushrooms until deeply golden and cooked through. Add the garlic and butter and fry for another 30 seconds-1 minute, until the garlic is a light golden color. Turn off the heat then add the spinach, lemon juice and season with salt and pepper to taste.

3. Add the cooked spaghetti and a splash of the cooking water. Stir the pasta into the sauce and add more water if necessary.

4. Serve with feta cheese.

Know Your Produce: Gold Beets

You may be most familiar with the red beet, but beets come in a variety of colors. One variety is orange, known as the gold beet. A descendant of a sea vegetable, golden beets are a nutrient-rich food high in fiber and potassium. The beet greens are more nutritious than the beets, containing twice the potassium and high in beta carotene and folic acid.

The difference between the red and the orange beet is the pigment compound. Red beets are rich in betalain pigment while orange beets are rich in b-xanthin pigment. Though their pigment color differs, their nutritional benefits are the same.

Steaming and roasting bring out the best flavor that the beet can offer. The skin must be peeled, which is easiest after it has cooked, as it simply slips away from its flesh. Beets pair well with cheese, bacon, apples, fennel, citrus, potatoes, shallots, vinegar, walnuts, smoked and cured fish. Beets will keep, refrigerated, for up to a week or longer if their tops are removed.

Cancer, Continued

I have been using my blog as a platform to talk about cancer the last few months joining our voice to the national campaign making October Breast Cancer Awareness Month. All those pink ribbons are a rallying point for all cancers.

Breast Cancer has the dubious distinction of being the #1 incidence of Cancer for women. For 2016 the projection is for 247,000 new cases or 29% of the 844,000 new cases of all cancer. #2 incidence for women getting Cancer in 2016 is claimed by Lung and Bronchus Cancer, 106,000 or 13% of all new cases of cancer for women.

However, when we look at the number of moms, sisters, and daughters who will die from cancer this year, ironically, breast cancer is #2 on the list of deaths related to cancer for 2016. Lung and bronchus cancer will claim more lives. In 2016 72,000 (26%) women will die from lung and bronchus cancer and 40,450 (14%) will pass from this life to the next from breast cancer. The total projected deaths for women with cancer in 2016 is 281,400.

For Men the #1 diagnosis for cancer in 2016 is prostrate cancer at 181,000 (21%) followed by lung and bronchus cancer at the rate of 118,000 (14%). And similar to the death rates for women, lung and bronchus cancer will claim more lives in 2016 86,000 (27%) and prostrate cancer at 26,000 (8%) of the 314,000 deaths for 2016. Bottom line: these are not statistics! They are moms, dads, sons, daughters, aunts, uncles, grandparents, friends and co-workers–people who are loved and who love. Some of them have lost their battle. Others are just beginning their battle.

We believe that these two things are essential to healing–prayer and a diet that’s rich in nutrition primarily from fruits and vegetables.

Featured Recipe: Roasted Delicata Squash & Onions

Ingredients:

2 delicata squash 1 medium red onion, sliced 2 tablespoons olive oil, divided 1/4 teaspoon salt 1 teaspoon chopped fresh rosemary 1 tablespoon maple syrup 1 tablespoon Dijon mustard

Directions:

Preheat oven to 425 °F.

Cut squash in half lengthwise, then crosswise; scoop out the seeds. Cut lengthwise into 1/2-inch-thick wedges. Toss with onion, 1 tablespoon oil and salt in a large bowl. Spread in an even layer on a baking sheet.

Roast, stirring once or twice, until tender and beginning to brown, about 30 minutes.

Combine the remaining 1 tablespoon oil, rosemary, syrup and mustard in a small bowl. Toss the vegetables with the dressing.

Know Your Produce: Cauliflower

Cauliflower is a member of the cruciferous family of vegetables, often overshadowed by its green cousin broccoli. This is one vegetable that deserves a regular rotation in your diet, however, as it contains an impressive array of nutrients, including vitamins, minerals, antioxidants, and other phytochemicals. For instance, it contains sulforaphane, a sulfur compound that has been shown to help kill cancer stem cells, thereby slowing tumor growth. Some researchers believe eliminating cancer stem cells may be key to controlling cancer.

Cauliflower can be eaten raw or cooked. Raw, it is best eaten accompanied by a dip or cut up and added to salads. When cooked, it can be eaten as a side dish, alone or topped with a sauce, such as gratin, hollandaise, or Mornay.

When storing, cauliflower should be left unwashed. Store in the refrigerator, with stem side down, in an open plastic bag or use a perforated plastic bag. This will avoid excess moisture, which causes the cauliflower to deteriorate faster.

The Story Behind a Box of Good

After my last article about the changes on the farm and at the business, I received a few emails encouraging us to keep up the good work. Back in the 90s (yes, we have been at home delivery for that long) we started out using paper grocery bags, lined with a plastic T-shirt bag for the “wet” produce. While that was a good solution for 50 customers, it wasn’t the best way to pack fragile items like tomatoes or peaches.

So we moved on to waxed boxes with a liner and put all the extra items purchased into plastic bags. Those waxed boxes lasted for 20 or 30 deliveries, which at that time seemed like an environmentally friendly decision, simply because we were buying less boxes. However, there was always this nagging feeling every time you had to dispose of one because it had to go to the landfill.

We were sensitive to the waxed box, plastic liner and plastic bag issues. We knew that there were companies in California in the home delivery industry who were using plastic bins to deliver their produce. The idea of using bins did eliminate the need for plastic bags, but it also supported the plastic industry quite a bit more than we were comfortable with, and we would have to make a very large investment upfront. For us there were a few apparent issues with this option: where does one store all of those plastic bins (1000s), all the damaged/unusable ones would still go to the landfill, and how much water and sanitizer would you need to use every week?

That last item was the kicker for us. Having to wash and sanitize every bin every week seemed like an incredible waste of water, soap, and bleach-type products. I would still feel like I would need to use a plastic liner because it wouldn’t feel sanitary enough for me to put your produce in a plastic bin. I still shudder when I think of this – yuck!

Mind you, we were a growing company with lots of little ones running around the farm (a.k.a., we were sleep deprived), but in one of our more lucid moments, we decided to go with a cardboard version of our box and stay with a liner and the plastic bags. This decision allowed us to recycle the boxes at the end of their usefulness, often using the older boxes one last time to send produce to the food banks.

One of our core principles is to be good stewards of the land and our natural resources. Because of this we are constantly evaluating our processes to better serve you as well as to benefit the environment. With those principles driving our discussion, we decided that using the recyclable cardboard boxes with a liner saves on landfill waste, plastic, water and chemical usage, and is a sanitary option. Is it perfect? No, but it has a minimal impact on the environment and is a sanitary way to distribute fresh produce.

Next week, I will go into our reasoning on plastic and how our company uses less than buying produce at the grocery store.

What We Eat Matters

Before I begin, I would like to share an excerpt from “Citizenship in a Republic,” by Theodore RooseveIt, April 23, 1910.

It is not the critic who counts; not the man who points out how the strong man stumbles, or where the doer of deeds could have done them better. The credit belongs to the man who is actually in the arena, whose face is marred by dust and sweat and blood; who strives valiantly; who errs, who comes short again and again, because there is no effort without error and shortcoming; but who does actually strive to do the deeds; who knows great enthusiasms, the great devotions; who spends himself in a worthy cause; who at the best knows in the end the triumph of high achievement, and who at the worst, if he fails, at least fails while daring greatly, so that his place shall never be with those cold and timid souls who neither know victory nor defeat. 

As I think about the market place that Klesick Family Farm serves, I feel much like this famous portion of Theodore Roosevelt’s speech. As a small farmer and small business owner, it can feel daunting to engage in this battle for good food. Good food that nourishes our bodies and is grown in a way that can heal our land and environment or build upon good stewardship.

Our nation at the turn of the 1900s was having a heated debate about Conservation and Stewardship. Those two concepts are used interchangeably today, but they are distinctly different. Conservationists were advocating for no use, to let nature function alone. An example of this would be our National Park System, and John Muir would be a proponent of this thinking. Stewardship advocates would want to see working landscapes that are actively managed for the benefit of the public. An example of this would be salmon fisheries, federal grazing permits on national lands or timber harvest in the national forests.

But when I survey the horizon today, I see less conservation and stewardship to benefit the public. I see well-oiled and well- connected multinational and national food, chemical, and large farms (food factories) protecting  their private interests. And at every turn these groups are blocking my access, our access, to change. We need to change the food system for the good of all, for the health of all.

So we find ourselves in the arena with you, battling for the health of our nation and for common sense to prevail in Congress. We are turning the tide. Every organic purchase sends a clear and definitive reminder that we are engaging in another food system that is a benefit to the environment, the nation’s health and family health.

Change is 80% Behavior and 20% Mental

If you believe in something that is realistically attainable and have the right attitude (mindset) coupled with realistic goals, you more often than not will be successful at reaching the prize. The challenge comes when our head knowledge (knowing the right thing to do) hasn’t become heart knowledge.

For instance, EVERYONE knows that eating more fruits and vegetables is the right thing to do. Nobody argues this fact. Yet this fact has a hard time travelling the 12 inches from our brain to our heart. Sadly, it usually takes a few rounds in a boxing match with a health issue like cancer, heart disease, diabetes, or obesity to provide enough motivation to travel the 12 inches. Those 12 inches are the hardest to travel in every area of our lives, whether it is food, finances, exercise, reading, or not texting while driving.

Or take the world of finance. EVERYONE knows that it is better to start your retirement planning earlier than later.  For example, if you start investing $167/mo ($2k/yr) in mutual funds (avg. rate of return 12%) at age 19, and do that till you are 26 and then stop (investing a total of 16k), at 65 you will have $2.3 million—Wow, 16k becomes $2.3 million! Ahhh, the miracle of time and compound interest! But if you are a late bloomer and start saving $167/mo at age 27 until the age of 65, at 65 you will have $1.5 million. Even though the second person invested 78k, they never caught up! (Adapted from DaveRamsey.com)

It is the same with eating fruits and vegetables. Starting earlier here, however, pays immediate health dividends (unlike finances), with a large payout in our retirement years (like finances). Time is definitely on the side of our children and the 20- and 30-somethings. If they embrace eating well, they will reap a more vibrant and healthy life for years to come. But for the over 40 crowd, we better get after the goal of eating better NOW!

Most of us reading this newsletter have already travelled that first 12 inches because we are getting a box of good, but each of us probably has room to improve our health! How about a goal to do one more thing this week that will improve your health now and in 20 and 30 and 40 years! It could be something as simple as one more glass of water or one less glass of soda. It could be eating a salad a day or going for a brisk walk (even when it is raining!)

Right now, you have already thought of one or two things. Do them and travel those 12 inches for yourself and your family. It will be worth the effort. The sooner you get started, the healthier you will be.

What is a Farmer to Do…

When it is snowing? Pray that it won’t in April! Although, this week I am assembling two greenhouses. After years of farming without a greenhouse, I have decided to build two smaller mobile style units. They will be on skids, so I can move them to new locations throughout the season. My plans are to start with early greens and move the houses to tomatoes, peppers and cucumbers for the remainder of the season and then move it again in the fall for winter greens. Disclaimer: dreaming is dangerous in the winter and I will not be held responsible for changing my mind when farming begins☺!

When cancer and heart disease are injuring lives and families? Pray for wisdom to be able to grow more nutritious food. The American Cancer Society spends $144,897,000 on cancer research every year.* Yes, almost 145 million dollars. How much is spent on nutrition research? $440,000 or 0.3% in 2010. Come on! Not even making it to 1%! What did Hypocrites say, “Let food be your medicine and medicine be your food.” One might conclude that the American Cancer Society missed that “memo.”

So what can KFF do? We can’t spend millions, but we can grow, raise, source and deliver life-giving foods. That is what we can do. We can fight cancer one family and one person at a time. So we need your help. We want to fund a local food outreach to people in our local communities who are fighting these diseases. We are calling it, Healing through Nutrition.

I was just talking to my team about how to make a difference in the lives of local people with cancer. And an hour later, we received a phone call from a customer who wanted to buy our Family Box for another family who is fighting cancer. Yes! That is what I want to be a part of—neighbors helping neighbors: a local solution for a local family fighting cancer or heart disease.

This accomplishes so many things. First, a box of good organic and nutritious food says, “We are with you. We love you!” It also saves that family time, by not having to go shopping. It also saves that family money that they can use on co-pays, medicine, travel and loss of work, etc.

Here is what I am proposing. We are a small company and a small farm, but we want to be your partners in good.
